Russian Rye
Provides a seditious taste with Russian Cuisine’s bread with lots of rye and sours. The mixture is prepared by traditional Russian recipes. Includes minimum amount of rye flour. It doesn’t puff up much and has a firm interior. The benefits and taste is improved with roasted cereal germs. A mixture of mostly rye and other grain sours are used to enrich the taste.

It gives a feeling of fullness because of its ability of water retaining. The sour rye breads has ligaments, which prevents cancer with its phytoestrogens.
A good rye grain will provide the 17,3% percent of the daily fiber intake.
USAGE
- For 25 kg of Garner Corn
- 1 kg yeast, 16 kg water
- Molding process:
- Stainless-steel fork mixer 25-30 mins
- Spiral Oven 10-15 mins
- Temperature 24-26 Celsius degrees
- Fermentation Process
- First Fermentation: 15 mins
- Cutting and Rolling
- Half Fermentation: 15 mins
- Last Fermentation: 30-45 mins
- The temperature and the time will be adjusted according to the weight of the dough.
